In this class, you will learn about the different types of cheese from bloomy rind to fresh to firm to blue. We will go over the different animals the milk for each cheese comes from and the different flavor profiles. We will discuss cheese regions and some of the name-protected cheeses in these regions. You will learn why some cheeses are stinky and if you are allowed to eat the rind. We dive into what cheeses are best for cooking based on melting points or for fondu. We will learn about proper storage, what happens if you see mold and why blue cheese is … well, blue cheese. Come hungry!
